Executive Chef and Proprietaire Peter Vauthy goes all out whatever he does. I’ve experienced his passion in action having dined at and enjoyed his RED South Beach multiple times over the years. This year he outdoes himself in his three Miami Spice menus – RED Classics, Seafood Weeks and Taste of Italy – that not only have exciting menu selections, but also deliver on the taste and quality. It has to be one of the best Spice offerings in town. Plus, there are enticing week day promotions especially on beverage. Spice dinner is $60 per person plus tax and tip and is offered from August 1 through September.

First, a word about the ambiance. RED South Beach is modern, spacious and attractive, with both indoor and outdoor courtyard seating, not your typical steakhouse décor. Service is professional and friendly.

If you’ve been to RED South Beach before, you’ll notice one change – more lighter fare options in the starters and main courses. We tried the RED Classics menu, starting with one of those new options – watermelon salad with wild arugula, feta cheese and lemon pepper vinaigrette. It was refreshing. Perfect on another one of our hot days in Miami! Mr. W went with the roasted bone marrow with bacon-jalapeno jam and toasted baguette. He pronounced it a wow, loving the perfect contrast of the crunchiness of the bacon against the butter-like creaminess of the marrow.

RED South Beach has always been known for its certified Angus Prime beef, so we opted for the sirloin strip with truffled whipped potatoes, green beans and maître d’butter. For a supplement he added on a 4 ounce lobster tail, going all the way with the surf and turf. Note that unlike many places these days, the entrees come with vegetables, so no need to order sides. I had the crab stuffed flounder with orzo, roasted tomato, baby spinach and lemon beurre blanc. The portion was so large it almost covered the plate (leftovers for the next day), and everything was very fresh and delicious, both dishes to get again when we return.

He gave us an assortment of desserts to try which are on several of the menus – his classic NY style cheesecake, tres leches cake and one of my favorites in the dessert department – donuts. His Sicilian donut balls with powdered sugar are addictive. I couldn’t help but eat beyond my self administered “quota”.

In addition to all of this you can “upgrade” any dish adding on from the main menu for a supplement but less than it would normally be. Plus, there are other specials including: martini Mondays, tomahawk Tuesdays, wine Wednesdays and sea and champagne Thursdays.

On some of the other menus, dishes that stood out (and there are many) are the pan roasted scallop with blue crab ravioli and parmesan cream; shrimp scampi pasta with spaghetti and parmesan; sesame crusted tuna salad with romaine, avocado, tomato, cucumber and wakame ginger soy; and slow roasted lamb shank with roasted vegetables, parmesan mashed potatoes and herb pan sauce.
The wine offerings are reasonably priced – glasses starting at $16 (6 ounce pour) and at $32 for a bottle. Cocktails are $19-$23.
