Chevre Miami could be a gourmet shop plucked from a village in France or Italy. And then there are the original, unique offerings and experiences to come created by its owner and CEO Mario Naar, AKA “The Cheese Don”. His pedigree includes a namesake shop and restaurant in Panama and formerly, a founder of the successful Salvaje restaurants which he started in Panama.
Want 5 jotas ham or Fermin charcuterie and sausages, he’ll go in the back and slice it to order. Want to know the best cheese for hamburgers? He’ll have you try the uber tasty but little known Jersey Hoeve gouda and suggest Wagyu UMAMI olive fed burgers that he has on hand. Want to do your own cheese and charcuterie board?
You can make it special with any of the locally made jams such as pear and truffle, tomatillo and of course fig, and a loaf of bread from Sullivan Bakery who made their name in New York City. Or get one of their ready made boards.
You can also find some of the tools for the preparation of cheese including top of the line Boska graters, cheese carving knives and raclette machines. But his offerings go beyond cheese to other high end pantry staples such as pastas from Cipriani, caviar and bottarga from Marky’s, and Carbone spaghetti sauces, and soon a selection of fine and RARE wine.
He also sells online, delivering anywhere in the USA and offers a two tier cheese of the month club for $85 or $120. And loved this, he came up with the idea of a real estate gift box, what’s sure to be a welcome house warming gift (a favorite with real estate brokers).
But there’s much more thanks to his non stop creativity. Coming up is a European sandwich offering of the week, a cheese counterpart to the Japanese omakase, oma-queso 12 to 15 course dinner with each course featuring a different cheese and preparation, online cheese classes and even cheese tours.
Chevre Miami also offers catering for receptions, dinners and weddings, complete with dedicated cheesemongers.
