Thinking about starting off the new year learning to cook or bake new dishes? A pavlova maybe? Or how about a new option for your catering needs, from small private dinners to teas and large events. Or maybe you or your adult child wants to become a culinary professional? Here’s a great new place I recently found and loved the event they put on for me and a good friend. It’s one of the top culinary schools in Miami that provides all of the above, the Mariano Moreno Culinary Institute in Coral Gables.

The institute has impressive professional credentials as a school for culinary professionals with degrees in culinary arts, baking and patisserie. To give you an idea, when top restaurants Novikov and Osaka decided to open a Miami outpost, they contracted with the Institute to have their culinary teams do final training and a dry run there. And, hush, hush, Director Victoria Sade said an internationally famous European chef who is coming to town with a new restaurant has also signed on.

Heading up the operation on the culinary side is French chef Georges Berger who worked with star chef Paul Bocuse in France and was the founder and pastry chef of Chocolate Fashion in Coral Gables . I recently co- hosted a lunch in one of three kitchens for a party of thirty which got high marks. Check out the wonderful menu!

Getting back to cooking classes, they kick off this month. Expect courses in pavlova with different fillings and another one in three kinds of meringue, paella, sushi, ceviche, macaroons, cake decoration, Peruvian cuisine, molecular gastronomy, and bicolor croissants!

This culinary school in Miami has branches in close to 12 locations including Argentina where it started 60 years ago. Locations include Venezuela, Ecuador, Dominican Republic, Colombia, Mexico along with Miami. It’s privately owned by Victoria’s family, founded by her father.

Thank you for sharing this. As of now (15.Feb.23 at 2:44pm ET), the mmci.edu has no information on these upcoming short courses you mentioned (pavlova, paella, sushi, ceviche, macaroons, etc.). It’d be great if they’d update the website to know more details (time, duration, cost, et al).
I’m going to check with the Director to see when the listings will be up and get back to you.
