Red Steakhouse Miami Spice 2015

Proprietor and Executive Chef Peter Vauthy of Red ,The Steakhouse, 119 Washington Avenue (t.305-534-3688) goes all out for Miami Spice, seeing it as an opportunity to showcase his finest to new diners who will become part of his many local fans (like yours truly). Last year he came up with a novel concept – not one, but four exciting themed menus for Miami Spice. It worked so well, he’s doing the same, though with some new themes and a number of new dishes (not content to rest on his laurels, he’s always reinventing and creating).

Here’s the rundown: Week one – “Classic steakhouse” style ; Week two – Seafood menu ; Week three – Italian menu ; Week four – Red’s greatest hits. Menus rotate on a weekly basis throughout August and September. Again, showing he goes all out on the promotion, on each menu there’s a choice of 4 to 6 first courses, 7 or 8 second courses, and a choice of desserts. There are also upgrades for guests to choose from.To sweeten the pot even more, each week there’s a Prime rib Fridays serving a 10 ounce CAB Prime rib menu option.

We went to a tasting of select dishes from each of the menus. It was a tough choice, but here are picks of my faves that I tasted and others that sounded especially appealing:

Classic Style Steakhouse

First course: Caesar salad or spinach salad
upgrade – burrata salad with aged balsamic reduction (burrata in any size, shape and preparation is always irresistible)

Second course: Scampi style shrimp over linguine in a lemon garlic butter
(you’d expect the beef to be fab. Here seafood lovers will be happy campers too). The shrimp were large, super fresh and perfectly seasoned. Note: baked potato and broccoli come with all entrees except for pasta dishes.
Upgrade – be sure to get the loaded potato with bacon, cheddar and sour cream. Seriously WTC.

Third course: Apple Crisp with oatmeal streusel, apple cider caramel, apple chip and powdered sugar

Seafood Menu

First course: Mussels diavolo – plump mussels, chili and a tomato garlic sauce that does Italian food justice

Second course: Pan seared snapper with coconut rice, sautéed vegetables, coconut curry or lobster fra diavolo
Upgrade – surf and turf
Entrees are served with green beans almandine and steak frites except for pasta and fish dishes.

Third course: Pineapple upside down cake – glad to see this classic is back
Upgrade – beignets dusted with powdered sugar, vanilla bourbon sauce (the Chef is a master at donuts in all forms)

Italian Style

First course: Penne & fennel sausage with romano salsa and garlic
Upgrade – antipasti salad with sun dried tomatoes, olives, salami, chickpeas, peperonata, Italian Vin

Second course: Double cut pork chop
Entrees are served with parmesan mashed potatoes and zucchini chiles except for pasta and fish dishes.

Third course: Ricotta cake with blackberries, limoncello sauce, whipped cream and lemon chip

Red’s Greatest Hits

First course: Wedge salad – iceberg salad, pancetta, blue cheese, tomato, peppered ranch dressing
Upgrade Lemon garlic shrimp

Second course: Petite 5 oz certified Angus Beef filet
Upgrade – certified Angus beef prime ribeye

All entrees come with hashed brown potatoes and snap peas except pasta dishes.

Third course: Peanut butter pie – chocolate ganache, peanut butter mousse, caramel sauce, chocolate sauce, whipped cream, burnt peanuts

Specially priced Miami Spice wine selections are also available starting at $13 a glass and $41 a bottle and specialty cocktails as well.
As always the ambiance is special occasion atmosphere, the service friendly and professional, and everything about the place is one to beat.
