Best Bakeries in Miami: True Loaf

“Miami needs more good bakeries” said a good friend of mine. I totally concur, and so did Tomas, a former banker, line cook at La Grenouille in New York, and now baker who specializes in San Francisco style sourdough bread (a la Tartine bakery).  True Loaf,1894 Bay Road in Miami Beach’s Sunset Harbour neighborhood has no website, no Facebook page, and yet, just open for a month or so,the word has gotten out. People are making this a new destination in and of itself. Having been back twice and plotting a third time, I’m one of the converted. The sourdough is among the top two in Miami in my book (along with Zak the Baker). There’s a country selection made mostly with white flour, and a whole wheat version with sunflower and flax seeds, both organic. Several times a week Tomas varies the ingredients in the Country loaf, sometimes adding walnuts and olives, other times cherries and pecans, and even bittersweet chocolate. Regardless of which variety you get, all are crusty and chewy and fragrant, as a top sourdough should be. Another big seller are the croissants, plain, almond and ham and cheese,  morning buns, and a standout – the kouign Amann, a pastry from Britanny made with croissant dough, sea salt, sugar and with a dollop of lime curd.  They also sell a line of Big Spoon peanut butter from North Carolina and will soon be selling house made jams. All of the bread is baked fresh daily and what isn’t sold is given to homeless shelters.  And one more thing – an important tip. How do you keep bread beyond day one? Put the cut side down on a wooden board and it should keep a week is Tomas’ advice. You can also freeze it but never refrigerate it. Loaves are just under  $10.
