Andrew Carmellini’s The Dutch at the W South Beach has made it into this blog recently for being one of the top spots for beautiful people watching. And now it’s earned another prime spot for its desserts, thanks to the unpretentious Executive Pastry Chef, Joshua Gripper and his sous chef Jackie Marshall. Considering his haute pastry pedigree Chef Gripper has a lot to be pretentious about — Daniel Boulud restaurants in New York, Michelin two star restaurant Oustau de Baumanniere, Eleven Madison Park, and Gotham Steak in Miami.
A salad “sandwich” with the “bread” being oh-so-thin sweet potato poached in carrot juice, filled with a nest of baby greens, red grapes, Maytag blue cheese and slivered tomato, all topped in a light, champagne poppy seed vinaigrette. Cauliflower “steak” with sweet potato fettuccine, yellow bell pepper and chimichurri. Or, for meat lovers, short rib braised in red wine with crunchy polenta and confit baby carrots. You probably got the picture now. Highly creative and brilliant way with vegetables. These are some of the dishes by Chef Venoy Rogers III on the Miami Spice menu at Essensia restaurant at The Palms Hotel & Spa.
